Carrot cake is definitely one of my guilty pleasures. Nothing better than a good ole carrot cake with frosting and some hot tea! Because of my love for carrot cakes, I thought of a different way to eat them: energy bites. Some recipes on Pinterest piqued my interest, and when I fine tuned the recipe to a perfect protein blast of energy, I knew I had to share it.
Ingredients:
2/3 cup oats
1/2 cup dates pitted
1/2 cup walnuts
1/3 cup shredded carrot
1/2 Tbsp maple syrup
2 Tbsp coconut oil liquid form
1/2 tsp cinnamon
Protein Frosting
1/2 cup vanilla protein powder
1/4 cup greek yogurt
Yield:
84 Calories per 1 Bite without Frosting
11g Carbs 4g Fat 2g Protein
Directions:
Add everything to a blend or food processor and mix well. You may need to continually push the mixture down in order to get all the dates properly chopped. Form into balls using a heaping Tbsp for each. Store in the refrigerator or freezer. (I prefer the refrigerator because they get firmer without freezing.)
Optional Protein Frosting: Mix together the ingredients for protein frosting and dip the bites into frosting or use a spoon and place over energy bites. Then refrigerate for 1h before serving.
